I first met Beatrix, who was our chef at the
White Lotus, on an eating disorders training conference and retreat for
dietitians and therapists in 1995. She nourished us with her totally vegan
cuisine for nearly a week using only the freshest ingredients combined
with love and imagination. How thankful I was to bring home her book, The
Art of Taste, for it highlights her roles as a poet, a painter, and a
woman as well. Her simple recipes are imaginative and exquisitely
delicious for vegetarians and non-vegetarians. Try the comforting Ingrid's
Quick Bread, and the life-enhancing Mixed Vegetable Soup a la Ron, which
can double as a main course.
